Turmeric Chicken Soup Recipe (Home-Style):
Ingredients
For the chicken broth:
- 1 lb (450 g) chicken breast (or thighs for more flavor)
- 1 bay leaf
- 1 small cinnamon stick
- 2 whole cloves
- 1 small onion, quartered
- ½ tsp ground cardamom
- ½ tsp black peppercorns (or ¼ tsp ground)
- 1½ tsp salt
- 8 cups (1.9 L) water
For the soup:
- 2 tbsp olive oil
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 1 medium carrot, finely diced
- ½ tsp ground turmeric
- ½ tsp curry powder
- ¼ tsp ground black pepper
- ¼ tsp salt (adjust to taste)
- 1½ tbsp all-purpose flour
- 1½ cups cooked chicken, shredded
- ¾ cup vermicelli noodles (optional)
- 6 cups reserved chicken broth
1. Make the Broth
Make the broth:
- In a pot, add chicken, water, bay leaf, cinnamon stick, cloves, onion, cardamom, black pepper and salt.
- Bring to a boil, then simmer for 20–25 minutes until the chicken is cooked.
- Remove chicken, shred it, and strain the broth. Set aside.



Build the soup base:
- In a clean pot, heat olive oil over medium heat.
- Add onion and sauté until soft and translucent ( 5-7 minutes).
- Add garlic and carrot, cook for 2 more minutes.
- Add all the spices and salt.
- Cook flour in a pan for one minute to remove the raw taste; add to soup to thicken.
